Thai green curry is a very popular dish in Thai cuisine. Curries are a staple in South Asian cuisine, however green curry from Thailand is quite different to South Asian varieties and a favourite for many because of its colour and the unique flavours.
Thai green chicken curry is one of the kids’ favourite at home, and I like to prepare it with fresh ingredients to suit my kids’ dietary needs. I have also adjusted how spicy the dish is, to cater for my kids.
You can make this curry with your favourite vegetables, tofu, meat or seafood. It goes well with rice or noodles equally.

Ingredients
For the green curry paste
- 1-2 green chillies, stem removed
- 3 Asian shallots, sliced
- 2 garlic cloves, chopped
- 1 stalk lemon grass, cut into small pieces
- ¼ cup coriander or cilantro, chopped
- ¼ cup basil leaf
- 1 tsp lime juice
- ½ tsp salt
- 1 tsp brown sugar
- 2tsp fish sauce (gluten-free)
- 1tbsp dried shrimp, soaked in ¼ cup hot water
- 1tsp cumin powder
- 1tsp coriander powder
- ½ tsp white pepper
- 2tbsp water
- ½ inch galangal, half of which grated
For curry
- 250g boneless chicken, cleaned and cut into small pieces
- 2tbsp vegetable oil
- 1 cup coconut milk
- 50g Turkish berry
- ½ broccoli florets
- 3 red big chilli, sliced
- 2 kaffir leaves, thinly sliced
Instructions
- Place all the cleaned ingredients for curry paste into the blender jar and blend into a paste.
- In a wok, add oil and sauté green curry paste for a minute in a medium high flame.
- Add the coconut milk and stir well until well mixed, for 2-3 minutes.
- Add the chicken, kaffir leaves and Turkish berry and let it to cook in a medium low flame for7-8 minutes.
- Add broccoli and cook for 3 more minutes.
- Check the taste and add more sugar or salt if required.
- Add sliced red chili and stir well.
- Now it’s ready to serve.
You can add green chillies if you like the curry to be spicy. Conversely, add a bit of sugar and coconut milk to make it milder. You can also marinate the chicken with fish sauce if to make the meat more flavoursome.
