Pineapple Fried Rice

Pineapple fried rice is a well known Thai dish. It’s a little different from the other fried rice preparations due to its colour and flavour. It is easy to prepare at home with the natural preservative-free ingredients in about 30 minutes.

This dish is typically served in a pineapple. The uncommon presentation is bound to make it a kids favourite.

Ingredients

  • 1 fresh pineapple
  • 3-4 cups cooked rice
  • 10-12 cleaned prawns
  • 250g chicken breast
  • 2 eggs
  • 4 garlic cloves, chopped
  • 4tbsp chopped shallots
  • 1 cup vegetables as preferred, chopped
  • 3tbsp vegetable oil
  • 2tbsp roasted cashew nuts, cut in half
  • 1tbsp raisins
  • 4tbsp soy sauce
  • 2tbsp fish sauce
  • ½tsp brown sugar
  • ½tsp curry powder
  • ½tsp turmeric
  • 1tsp salt
  • spring onion, parsley to garnish
  • 2 small red chillies, chopped

Instructions

  1. Cut the pineapple and split into two. With a sharp knife, draw a line in all four sides ½ inch inside the edges. Cut deeper following the lines and scoop the fruit out with a spoon.
  2. Cut the chicken into small pieces, mix with salt and keep aside.
  3. Mix all the sauces, sugar, and curry powder together.
  4. In a wok, add oil add chopped garlic and onion, sauté for 2minutes, add the chicken and sauté for another 4-5 minutes, add prawn and cook for another 3 minutes.
  5. Move chicken and prawns to a side. Add beaten eggs and stir for 1-2 minutes.
  6. Add the scooped pineapple fruit, raisins and vegetables and cook for 2 minutes.
  7. Add rice and mix well.
  8. Finally add all the sauces, brown sugar and pepper and mix well.
  9. Transfer to the pineapple bowl.
  10. Garnish with some roasted cashews, chopped spring onions and parsley to serve.

Many variations to the above recipe is possible. You can use pepper instead of curry powder or canned pineapple instead of fresh. Chicken floss can also be used to garnish.
