Rainbow funfetti cheesecake is a fun treat for any party and it’s very easy to make. No baking is required which means preparation time is quite short. It’s a good choice for kids’ birthday cake too!

Ingredients

For the crust:
- 200g graham crackers or digestive biscuits
- 110g melted butter
For the cheesecake:
- 300g cream cheese
- 300g whipping cream
- 100g powdered sugar
- 2 tbsp lemon juice
- ½ cup water
- 2½ teaspoon agar agar or gelatine
For the topping:
- Rainbow sprinkles
Instructions
For the crust:
- Place the graham crackers or digestive biscuits in a zip lock bag and crush with a rolling pin.
- Transfer the biscuit crumbs into a big bowl, add melted butter and mix well.
- Transfer the mix into a removable bottom pan. Evenly spread the crumbs and press tight with measuring cups, spoons or spatula.
- Transfer to the fridge.
For the cheesecake:
- Whisk the cream cheese until fluffy, then add powdered sugar, mix well and keep aside.
- Whisk the whipping cream in another bowl until stiff peaks form.
- Combine the cream cheese and whipped cream together.
- Boil the water, add the agar agar and stir well until it thickens.
- Let it to cool for 5 minutes.
- Add lemon juice, vanilla and agar agar mix and gently fold everything together, using a spatula.
- Pour over the crust and refrigerate for minimum 8 hours
Finally, sprinkle the funfetti over the cheesecake to complete the preparation.

All the recipes are suitable for the 9 inches (23cm) spring form pan with removable bottom.
